Have you always cooked with meat? Watch this. + Become a cooking superhero

Hello there, what's cooking?

Any plans to batch cook this weekend?

While meal plan subscribers will be working from the 07-08 meal plan (see the menu at the bottom of this message), I'll be following the free sample plan you can download. I'll document my family's dinners for the next two weeks to produce a YouTube video about the sample plan. Stay tuned!

If you've always cooked with meat, you need to know THIS about meal planning

In my latest YouTube video, I share the 3 big differences you'll encounter when starting to plan healthy vegan meals compared to your previous experience cooking with meat.

In case you don't like watching videos on YouTube, here are the 3 big differences (roughly summarized):

🍆 Plants stay fresh, appealing, and safe-to-eat for much longer than animal products. It's a good idea to schedule dishes that require crunchy veg earlier in the week (e.g., salads, bowls, stir-fries), but Friday's wilted greens will still be a great addition to simmered dishes (and won't try to kill you with e-coli... 😱).

⭐ Rather than center dinner around a "protein food" ("chicken or fish?), every meal should be planned around a "star vegetable." Create each dinner around a feature veggie that's the freshest you can find, add a couple of sidekicks (of different colors), plus onion and garlic. Everyone - including omnivores - should plan their meals like that.

⚡ You can relax about nutrition. Sure, meat and animal products may have protein, but they desperately lack the critical phytonutrients we need to boost our immune system and prevent disease. Animal products also contain too much saturated fat and unnecessary cholesterol. Plants, on the other hand, do have plenty of protein, minerals, vitamins, and also all of those other cool nutrients. If you follow the Green Food Guide, all of your needs will be covered, and more. Just don't forget to supplement vitamin B12.

Vegetables are LOVE

Did you know that donning an apron can summon special powers? It's a superhero cape that transforms you into the kind of person who cooks really good food for yourself and your loved ones.

When you resist cooking, putting on an apron interrupts the negative talk. It signals to your brain: it's time to get this cooking done!!

I've partnered with a small print-on-demand company to create these aprons, and I love mine - especially the extra long straps that go twice around my waist and the two pockets! There's also a tote bag (for your trip to the farmers' market), a t-shirt, and a poster.

Keep on cooking,

Brigitte

p.s. Deciding what's for dinner is the worst. Why don't you leave that up to me? Hey there, what's cooking? What a ride we're on at the moment. I admit that I've had a hard time focusing on creating new videos and articles over the last few weeks. My cooking hasn't been particularly inspired, either. Anxiety and overwhelm aren't great companions in the kitchen. Still, we have to eat. And even just cooking something small can empower and nourish us. So let's head to the kitchen together. Close our eyes and take three deep breaths. Connect with all the other beings and...

Hello there, what's cooking this week? I talk a lot about keeping things simple in the kitchen: improvising simple meals with what you have, making fewer decisions, and just in general trying to make life easier for ourselves without sacrificing nutrition and taste. And yet, if you peek inside my pantry - as you get to do if you watch the replay of my "Build your capsule pantry" free workshop - you'll see that chaos is also part of my kitchen life. As a professional meal planner and healthy...

Hello there, what's cooking? This month's free workshop is about adopting a minimalist approach to stocking your pantry: In this 1-hour Zoom event, you'll find out what ingredients I keep inside my kitchen cabinets... and maybe rethink what you should keep in YOURS. You may be surprised to learn that, as a full-time cooking professional, I don't actually have a big kitchen and no separate pantry!! I have to be very intentional about what I stock. We chose to live in an apartment in part...
